[00:00:00] When you hear about a celebrity tequila, you probably think hype over heritage. But this one's different. Today we're going to talk about Insulito Tequila Blanco, a confirmed additive free tequila made at high altitude by a real tequila family. A country band actually cared enough to do it right. Let's break down the brand story, how it's made and most importantly, how this tequila tastes. Insulated tequila is a result of a pretty unique partnership. It's created by the country brand Midland, a Grammy nominated band, alongside Octivo and Alberta Herrera, the brothers who own Premium the Jalisco Distillery NOM 1558. This isn't a licensing deal here. Our brothers are hands on master distillers and Midland didn't just slap their name on a bottle. They were involved in shaping the style and identity of this tequila. The business side is led by Peter Kelly, the founder and CEO of EnSolido and the head of Spirits Innovation Partners, with Sean Thurman joining as chief growth officer in late 2024 to help scale this brand. What really stands out is where this tequila is actually made. Mesamit La Jalisco. This is high altitude tequila country sitting around 7,200ft elevation, which brings some cooler temperatures, slower fermentation and a different agave expression. Now let's get to how this Insulito Blanco is actually made because that's where it earns its credibility. 100% blue Weber Agave, all of them sourced in Los Altos and the Tequila Valley. So fully matured agaves blended together. So you're getting the Valles and the Highlands together. Their cooking process is a low pressure autoclave. Slow cooking, controlled cooking. It preserves the agave sweetness without the bitterness. And to me, low pressure autoclaves make some of the juiciest cooked agave I've ever eaten. Their extraction is roller mill. Fermentation is stainless steel tanks, no fibers, controlled yeast for consistency and clarity. Distillation is stainless steel pot stills. And the water source is a natural spring from the region. And this one is coming in at 40 ABV or 80 proof. So you can see in this production method, it is clean. It is also an additive free. They were confirmed additive free by the tequila matchmaker when that program was around. All right, let's get it in the glass. [00:02:23] Nice clear blanco. Love it. [00:02:26] How to get a nice cooked agave. I also get a little bit of a chocolate note, which is a little different. There's a bright citrus orange zest, lemon peel, there's some, a little bit of a grassy note and there's A nice minerality as well. Almost like. Almost like limestone. [00:02:43] For a fresh pop and a first pour, you would think there'd be more alcohol in the glass, but really there wasn't a lot of alcohol in the nose either. All right, let's give it a try. [00:02:52] Sweet cooked agave. That's really nice. There's a lot of citrus pick up. Really just a nice orange zest. There's a really nice black pepper note, a little bit of a herbal grassy note that's almost minty. The mouth feels kind of medium. It's. It's got a really nice finish as well as it's kind of hanging on and it's very balanced. It's a little bit of a nice and pepper in the finish as well. And that mintiness kind of comes out as well. I try. Try that again. That's a very nice tequila. Insulito is a blanco that kind of fits in a lot of different lanes or categories for me. For somebody that's really looking for an additive free brand at a great price that has good distribution, check it out. This is a tequila for tequila people as well. This is something that has a lot of great flavors, a little bit more citrus and minerality than some of the blancos that I've had. This one could easily be a daily sipper for me. I'm sure it'd be solid in a cocktail as well. So this does prove. Just because you have a celebrity on the name doesn't mean the tequila is not outstanding. And Selena Blanco is a tequila that I could sip on and drink on a regular basis. And quite honestly, I'd sit back and listen to a little Midland. They have a great song called Drinking Problem. And some people watch my videos and think I may have one since I do this a lot. This is real tequila by real distillers at a really high altitude. This is a really clean, great tequila.
