Today, I taste Dos Ángeles Reposado and take a closer look at how it’s made, from the agave and cooking process to wild fermentation, distillation, and barrel aging.
Here’s what we explore:
100% Blue Weber Agave from the Amatitán area
12-hour low-pressure autoclave cooking
Roller mill extraction & deep well water
Wild yeast fermentation in open-air stainless steel tanks
Double distillation in stainless steel stills with copper heads
French Oak & American Oak barrel aging
Tasting Notes:
Cooked agave, honey, cinnamon, orange, vegetal and floral notes, followed by vanilla, caramel, butterscotch, pepper, and barrel spice.
The result is a complex and creamy Reposado with strong cooked agave and honey character.
