[00:00:00] This is one of my favorite high proof tequilas, period. And after talking to JP from Cascanes and visiting their distillery, I know why. Welcome back. If you've been here before, if it's your first time. Thanks for watching. Today we are going to talk About Cascanes number 10. It is their still strength bottled at 54 ABV. And honestly, this is one that I keep going back to. I recently sat down with JP from Cascanes and one thing became really clear. They're not trying to make tequila for everyone. They're trying to make tequila. Right? And number 10 is that philosoph in a glass. Here's what you're getting with this one. 100% Blue Weber Agave natural spring water that's trucked in from a town way far away from their distillery. A couple of hours traditional process and bottled it still strength. Let's talk about that water real quick because we talk about terroir and tequila all the time. Are they Highland agaves or Valles Agaves? But water does as well and they recognize that when they first started making their tequila and, and they found a water that they love, which is where one of the founders grew up, they worked a deal out with that town to truck that water all the way back to their distillery, NOM 1614 TTAC where they make this tequila. [00:01:27] Okay, that was a big pour for a high proof tequila for tonight. But hey, it's a Sunday night when I'm filming this video and I'll probably crash out early after this. So let's dive into the nose of this one big cooked agave, like just standing in front of the oven cooked agave. And I really like that about high proofs. There's less water to proof it down, therefore you just have so much more aromas and flavors. It's got a little bit of a funkiness. There's a lot of minerality there. And with cascanes I always pick up like a lime zest and also a little bit of celery. Now it's a really clean like green smell and I, I always pick it up with cascanes. It's a good mix to have the funky note along with this celery note. Let's hit it on the palate.
[00:02:14] I love that heat, it's one thing I really like about cascanes is in the finish. It has a really nice a blend between a peppery heat and a vegetable heat.
[00:02:26] It's really thick. It's got a great oily mouthfeel. You get a lot of cooked agave. You get that black pepper spice. And there's actually a little bit of grapefruit.
[00:02:36] To me is this citrus is like a grapefruit with again, I get like a vegetable note that's not as similar to celery as it is in the nose. I would say that it's a little more of a, like a grassy note. Not as much celery, but a little more grass. I really like the minerality in this one. It also is just very creamy. The finish, it's one of my favorite parts. It's lingering spice. Like this spiciness is just hanging on. There's some dry minerality there where I can almost get a little bit of limestone or earthiness that I get. And the agave just stays there as well. The heat fired up really strong, but the heat tapers way down very quickly. I think once that alcohol gets through, it kind of comes down to this nice lingering. Right now I get almost like a eucalyptus in the finish that just hangs on. This is one where you sip it and it sticks with you for quite a while. Why is this in one of my favorite high proofs? That's easy. It's got great koft agave flavor, fantastic mouthfeel, and it's a really balanced tequila. And. And after talking to JP and watching them how they do this in the distillery, they're not cutting any corners. They're really trying to put together the best tequila possible.
[00:03:50] Now, let's be real. Number 10 is not for beginners. This is a tequila that you probably want to be drinking some regular blancos and maybe even a little bit of high proof before you dive into this one. Because it is high proof, it's additive free, and it's a traditionally made Tequila. But if you're not used to that heat, this one, you may say is too hot when you first start. It is one of my top high proof tequilas. I think it's one of the best ones out there right now. I will say it doesn't have the funk that it used to have.
