[00:00:00] Could velour tequila actually get any better? You guys all know I love velour. And I did do a quick little review about this out of a sample bottle, but I've been chilling on a big one here and really giving it a try. And I wanted to talk about it and kind of go through a review I'm really excited about. This is batch two. And what they did was they just let this come out at still strength. They did proof it down a little bit to 47% ABV. Batch two's at 43 and batch one was at 42. So we've been inching up a little bit in the proof. And you know the best thing about high proofs? More agave flavor, more tequila aromas because there's just less water. So let's get this one in the glass and let's do a real review. I've been playing with this new glass here from Glassman, and it really gives me a. A lot more aromas. So I'm kind of digging this one right now. So let's. Let's dive into what Christiana had up her sleeve, making a hybrew. Okay. That the agave is just really strong. You got this really good cooked roasted agave smell. And you pick up just a hint of that valar funkiness. Just not a lot, just a little. Leaves a lot of legs on the glass.
[00:01:07] Kind of see it on there. It's a beautiful crystal color. There's some really nice earthy notes. Get a little bit of celery, a little bit of vegetal notes. There's also just a little hint of a light vanilla. All right, let's dive in. Great mouth feel. Great minerality in coptagave. That celery is there. There's a nice, like, vegetal note that goes into a nice peppery finish. Just a little bit of heat, you get a little bit of anise come in the actually mid palate flavors are really nice. Let's. Let's do that one more time. Just such a great cooked agave taste. And those vegetable notes are just fantastic. I do pick up a little bit of a. A hint of a lime zest, citrus. The finish is nice and long. It. It kind of hangs on. It's very balanced. It gets you on both sides of the mouth. It's. It's really nice. So when you think of a production method here, these are all Valles agaves. They're cooked in an autoclave at very low pressure. Then they go through a one pass roller mill. They pass it through there a few times. And again, wild open stainless steel fermentation, just letting it go as long as it takes. Kind of getting a little bit into that longer finish and fermentation, bringing a little more flavors going from there to twice distilled and stainless steel pops with copper coils and then bottled like I said at 47 proof. This is a fantastic tequila. Now look, what's crazy is this is, this is actually very limited. They're sold out from the factory. So what's left is in distributors hands and stores hands. So if you see it on the shelf, grab it. Because this kind of sold fast food. I think they thought it was going to. So there are a few stores here in the Indianapolis area that have it. I know there's some stores in California that have it. I've seen some posts of some places in North Carolina and New York where it's available as well.
