[00:00:00] All right, let's have one of my favorite brands right here. And I know I don't talk about favorites and all that, but this is a fantastic tequila, and I call this a tequila with a purpose. So let's pour some Valar repo tequila. My Cristiana Moratans, she's the owner of this company. She's also the owner of the Juina Buena foundation, which stands for good people doing some great things for some good people in Mexico. So let's talk about this tequila a little bit right here. Made it nom 1599 master distiller. Renee. This is Valais agave, low pressure autoclave, low and slow, cooked just right. Going into some big stainless steel, open wild fermentation. And they do it a little long and they do it just right, so you get a little malolactic flavor to it. It's always phenomenal, twice distilled and coming out at an amazing 42 ABV. So a little bit higher proof than your standard tequila. And then these are going into some barrels and being rested just right to get this amazing flav.
[00:01:01] So I talk about their tequila a lot because it is a tequila that is one of those cherished, amazing bottles that's really good. So if you're looking for a tequila that you want something that's going to be a great one to taste that brings you this amazing cooked agave that's also very complex, a lot of flavors and a lot of things going on, this is one of them to get. And this is something that I'll sit down after a great dinner and go, okay, want the reposado? Sometimes I want the anejo. And the blanco is amazing as well. It's one of my favorite blancos. So great. Absolutely great tequila. I just got to do an interview with Cristiano that'll be coming out in a few weeks where we talk about all of the great things that's going on with Valar. Their batch two is coming up. And we also talk about what's gone on with the HU foundation and talking about all of the things they're doing to help bring water to a small community there. Hey, let's. Let's dig into this tequila, right? Let's. Let's jump into the nose.
[00:01:56] First off, thing about this one is that cooked agave. This one smells like I'm standing right in the edge of the autoclave right as they open the door. Cooked pumpkin, sweet potato, and a little bit of a pineapple aroma is really kind of what I feel like cooked agave smells like, or the best way to explain it to somebody, a little bit of that funkiness, you know, kind of a little bit of that malolactic, almost like feta. Cheesy smell in the nose.
[00:02:26] You also pick up a little bit of oak and I get a little bit of caramelish in the smell. So let's see if the taste delivers the same. You would never be able to tell me that's above 80 proof. It is so easy to drink at that proof. The cooked agave is so strong, that cheesiness that you get in the smell turns into a creaminess in the taste. I get a little bit of apple that cooked agave is there. I get a little bit of a butterscotch and a little bit of a caramelly barrel note. Really light with a little bit of vanilla and a very nice sweetness when you go into the finish. Finish is long and the finish brings out some cinnamon. That little sting or peppery flavor turns into a great run of cinnamon.
[00:03:13] This, and I guarantee you the more I sit here and taste it, the more flavors that I'll get out of it.
[00:03:18] There's a fruitiness in it when you're thinking about that cinnamon and a little bit of that apple flavor that you get in it. I also pick up a little bit of banana and like a hint of a melon in that flavor. And then that rolls, like I said, right into a cinnamon finish. Such a great, complex reposado.
[00:03:39] An amazing tequila. So this is one to hunt for. They sell it on their website. They have a great duo box for I think it's $139. You get the blanco and the reposado and a great presentation. And keep in mind that every single bottle of velour that you buy is going to help bring water to a community in Mexico near Athanasios Distillery where this is manufactured. Really going to help a specific group of people, but incredibly scalable where they're going to be able to work with other brands and build this good agave pledge and bring this to all the areas that don't have water in the area.
