Can a distillery with every modern production option available still choose tradition?

Today I’m reviewing Casa Loy Piedra y Agave Blanco 49, a high-proof tequila produced at NOM 1633 in the Southern Highlands of Jalisco. What makes this tequila so interesting is that the distillery has access to multiple production methods, yet for this release they chose a traditional approach focused on flavor and character.

This tequila is made using stone brick ovens, tahona extraction, spontaneous open-air fermentation with fibers, deep well water, and double distillation in copper pot stills before being bottled at a bold 49% ABV (98 proof).

I also had the opportunity to meet Luis Loy in Guadalajara during my 2025 trip to Mexico. We spent time tasting tequila, discussing the project, and talking about the vision behind Casa Loy. After seeing the passion behind the brand, I was excited to finally sit down and review this bottle.

[00:00:00] Have you ever tasted a tequila and immediately realized the people behind it are chasing flavor instead of shortcuts? That's what happened when I originally opened this bottle and tasted it. Today we're going to look at Casa Loy Pivadre y agave blanco 49, a high proof tequila coming out of NOM 1633 in the southern highlands of Jalisco. And what makes this interesting is this distillery can literally produce tequila using every single method possible. Modern methods and industrial methods and efficient methods. And this production style in this bottle is all traditional methods. Before we get into tasting notes, let's talk about the people for a second. I actually got to sit down with Louis Lloyd back in August of 25 when we were in Guadalajara. We spent some time talking tila over lunch, tasting through some of their tequilas and tasting this product right here that had just come to light but had not yet come to the United States. And this is the Mexican version. It was their Mexican version. High proof that they released at 43%. And I've been tasting on this one for a long time. And I really love the VOD bottle. The tohono on it is really amazing. And Casa Loy, they've been known to use a diffuser in some of their tequilas. And this one, they wanted to go really old school and use the old school process to make it. So not a celebrity flash, not a bunch of marketing, just going back to the original production methods that they can do at their distillery. So let's talk about their American release at 49% ABV. Stone ovens for cooking to hona extraction. Oh, all open air. Spontaneous fermentation and fermentation with fibers. Copper pot distillation. They have deep well water and it's bottled at 49% ABV. So this one's going to be a banger. I just took the plastic off. I have not tasted it yet. Let's get it in the glass and see what it smells and tastes like. [00:01:49] All right, let's get a nose. [00:01:51] Super good cooked agave on the nose. Honestly, a little funky. Some whetstone minerality. There's some pepper there, some citrus. A nice earthy herbal note. Almost reminds me of like cut grass and rain at the same time. All right, let's dive into the taste of this one. Okay. Nice sweetness. All cooked agave sweetness. And it's big. That agave flavor is really there. I get layers of pepper, citrus minerality. There's even a little bit of an olive. Briny note. It really coats your mouth. It's Pretty intense. It heats up almost like a. The finish is like a. A vegetal heat. It comes in at one level, and then it just keeps building into this hotter, hotter, hotter heat. But all of the heat is here. None of it's here. Has a great balance to it. And the cooked agave that hangs on with a little bit of lime zest in that finish is really nice. All right, so this one isn't trying to be an easy Tequila. This one isn't. This one is not trying to be a soft tequila or something us crazy Americans would say is smooth. This tequila has bite, flavor, flavor, texture, complexity. This is pretty impressive. I gotta tell you. I like this and I respect the hell out of these guys for being able to make very industrial tequila and also making the choice to create a traditional Tequila. This is. This is first class. [00:03:10] After meeting with Louis Loy, I knew they had a great vision behind this product. And I also know some great people helped work through shaping the profile of this, like Brad at Agave Love and Lore. I'm glad I was able to be a part of this early and taste through some of them as well. And I do have their new reposado that's only two months old for me to give feedback on what's going to come out of their reposado of this product. So if you're looking for a really traditional, great tequila to try out, check this one out. You got to look for it. You may be able to find it on their website.
