[00:00:00] All right, guys, check this one out. I'm really excited about this one. This is chapter two, Discreet though. This is a fantastic new tequila coming out of A new distillery, NOM 1643 El Sabino, owned by Roberto Lopez in the highlands. This man, they are just killing it with the tequilas coming out of there. I already did a review of chapter one and I did a great interview with Jake Taylor, the owner of Manuscript Though, one of the three founders. And they talk about how they came up with the whole idea, their story, their friendship, how they came up with the name, and what each chapter is going to be about. So check it out at the end of the video, there'll be a link to it so you can watch the interview. It's really awesome of how they came up with this. Three good old boys from Wisconsin who wanted to have some great tequila to drink and they came up with one. So this is utilizing estate grown agaves on Roberto's estate there. They're cooking these in a stone oven. They're using a roller mill for extraction. Deep well water is what they're using. They're going into stainless steel, open fermentation with fibers and then from there twice distilled in copper pots. And this tequila is really good to me. As you can see. I've almost drained this one. This is coming in at 51.55 ABV or 103.1. And they did it on purpose because October 31st is an important date to them and they wanted 1031 on the bottle. So definitely go check that out. Let's go ahead and give this one a nose.
[00:01:25] All right. I get a little bit of pedrichor a little bit of funkiness. Pedrichors that wet earth smell. I get a nice cooked agave. Before I've had this, it's been a little bit brighter with a little more citrus note, but today that is gone. It is really kind of vegetal with a lot of minerality in there. You would think being that high a proof, it would have a big hit of alcohol, but it really doesn't.
[00:01:48] On the taste, I get nice cooked agave. I get a sweetness that's there. I get that vegetal notes that I picked up on the nose and. And then it goes into a nice peppery, warm finish. The vegetal notes that I'm picking up in there are almost like a. Like a green vegetable. There's a lot of minerality. And the Pedrichor I picked up in the nose I don't get at all. It's also very creamy with a really nice mouth feel. So there's a lot of viscosity there. And the finish kind of heats up a little bit with that pepper. Kind of pulls all this alive out of the back of your mouth. It is a very well rounded, very balanced tequila. And it doesn't drink like it's a higher proof. I wanted to give it one more good taste. A lot. Lot warmer that time in the finish. A lot of pepper that time. I picked up just a hint of cinnamon in there and a little bit of honey. So you get a nice, like, honey flavor in there. That's really nice. Definitely one to pick up.
