[00:00:00] Okay, I got a new one here. At least new to me. Authentico tequila. This is an organic tequila. It is a blanco. It's made at NOM 1124. So we talk about all those big noms that we know, and it's really cool to me to be finding some tequilas that are coming from a nom that's maybe not as well known to me as some of the other noms. So I'm excited about giving it a try. Let's talk about their production methods real quick. So these guys, they're using again, ripe agaves. They're going into an autoclave and cooking those low pressure. From that low pressure autoclave, they're going to a roller mill for their crushing. And then all of that must is going into stainless steel tanks. This is a closed fermentation with a proprietary yeast. And then from there twice distilled like always. But these are distilled in stainless steel pots. Now, this was sent to me by the owner. I'm really excited that they sent it to me and I really hope to be able to get an interview set up with them. And they're originally from the Indiana area where I am from, and they currently live in St. Augustine, Florida, where one of my best friends and loan partners live. And it is amazing little town. So they do have great distribution across Florida. Let's. Let's dive into this one. Okay. I love me some highland agave. So let's, let's give this one a nose. [00:01:16] Okay. I get a little bit of agave, cooked agave smell. I get a clean smell. I pick up some honeysuckle and just a slight floral smell. So that is, it's very interesting. [00:01:30] I do get a little pepper, a little bit of a funkiness smell to it, which I really like. That the pepper, I get two peppers. Really. I get like a ground pepper or a hot pepper. And then I smell like a, like a green pepper as well. So this actually has a lot of. This has a lot going on for me in the nose. Maybe today is a good nose day. [00:01:50] All right, let's give it a taste and see how it tasted. [00:01:53] Nice cooked agave. Great mouthfeel. I get a little bit of honey. I get a fruitiness. That's really nice. Pick up a little bit of citrus. And there, there's that pepper in the finish. Not a real overpowering finish, but a nice little pepper tingle. Let's give it another taste. [00:02:10] That's a solid tequila. There's a lot of flavors in there. It's very floral, citrusy. [00:02:15] That that pepper's there. It has a nice creaminess. [00:02:19] I want to say. [00:02:21] It actually has like a cream soda kind of hint going into the. Into the finish, you know. $44, I think is where this is priced at 40, 45. This is a great tequila. It's a good find. I like that it's organic and it's great to find new tequilas to try. It has a good rating on Tequila Matchmaker as well. Check it out. I think they're in the 80s to an 83 at the community.
