[00:00:00] All right, welcome back. I am revisiting a tequila that I had the honor of not only tasting, but also discussing with the man behind it, Chef Don Des Rosier, the owner and creator of Cambio Tequila. In our interview, John shared his passion for doing things differently, for pushing tequila forward while respecting tradition. And nowhere is that vision clearer than in the bottle that we're going to have today. Some Cambio reposado. Funny story. I recorded an entire video a week ago reviewing this tequila and then found out that I pushed play, putting everything away. So we're going to revisit this one today. Okay. With all the careful craft and attention to detail that went into the Cambio Blanco. It's up there on my top shelf. Gave them an unparalleled foundation. From there, John and his team built something truly exceptional. A reposado unlike any other on the market. Aged first one month in Burgundy and Bordeaux wine barrels, and then for five months in French oak Chardonnay casks. This finishing process is. Is unprecedented in the world of tequila. It's innovative, it's bold, and it's very intentional. Cambio is made at NAM 1605 in the southern Los Altos Jalisco region. And I know you think 1605, not a lot of great tequilas come out of there, but this one does because they've created their own system inside of NAM 1605 and control the process. Check out the interview. Talks about the whole thing. They're using single estate blue Weber agaves. The agaves are slow cooked in stone ovens. They're cooked whole, they're cooked a special way, and they're cooked a special length of time. You want to see that in the video as well. They're using a traditional tohona for crushing open fermentation in wood tanks that sit inside of stainless steel tanks that are then wrapped on the outside with coils on the inside to keep the yeast cool and ferment this at a lower temperature. It's pretty amazing how they've come up with this process. He'll show you the whole process in the interview. That distillation twice in a stainless steel copper hybrid stills producing a high proof reposado 46 ABV. And here's the kicker. It's all clean, no additives. Pure craftsmanship. Let's dive into this one. Gosh, you get so much on this. I pick up tropical fruits. I pick up, like a bouquet of flowers, like an immediate floral note that you just don't get on a lot of tequilas.
[00:02:19] You definitely get the cooked Agave and a little bit of a citrus note.
[00:02:24] Let's taste nice cooked agave. I get a little bit of butterscotch, some almonds, and like a vanilla taste. But then what comes in for me is what I would say, stone fruits, like an apricot, a pear, a peach. You get this really nice fruitiness. And then in the finish, it's. I mean, it's still there. It's long. And that was just a little taste. You get that oak, but you pick up this dryness that my opinion is coming from that French oak and those wine barrels. The Chardonnay, I think, is lending that real fruitiness, and I think the French wine is what's kind of giving you that dryness.
[00:03:01] The sweetness is there. It doesn't overpower at all. This is just a great, well rounded tequila taking tradition and really adding innovation to it. This is one to try for sure. You know, Chef John told me in our conversation, his goal isn't to make more tequila. It's just to make tequila better. And after tasting this reposado, I have to say they've achieved exactly that with their innovative barrel program, their careful production method, and the soul to true craftsmanship behind it. Cambio Reposado is a tequila that challenges the entire category and rewards anybody willing to explore beyond the ordinary.
