[00:00:00] Let's talk about Trujillo Tequila. Tohona, right? So this is like many of the other ones that I've reviewed already from this brand. I am going to review the Tohono version. I love the bottle on this one. It gives you the volcanic stone look of the Tohona. I like the way they have the glass in the front and all the information on the side. This is 2024 Lot 1 Bottle 12210. This is USDA Organic. I love the information they put on the bottle. And we're going to give this one a shot tonight. So this one, NAM 1634, in the Los Altos region, they're using Los Altos agaves. They're doing a stone oven to hona crushed. They're doing open spontaneous fermentation with no fibers. And then from there, they're going to copper distillation with fibers inside. So that's a nice combination of doing something a little bit different, the way they make this. So we should enjoy this one very much. 40% ABV. All right, let's give this one an nose. So again, I get the cooked agave. I get a little bit of brininess, a lot of minerality, some vegetableness, and a little bit of citrus zest. I can't really put my finger on what that exactly is. So let's dive into the taste. Cooked agave is there the citrus is there the brininess? A little salty. That citrus that I pick up is a little bit of orange and a little bit of lime. And the agave, to me, is also a little green. So it's got a really clean taste to it. It does slide into a little bit of bitterness and a little bit of pepper in the finish. The finish came on pretty and then just disappeared. So let's try this again. Cooked agave, still the same. I still get that same lemon and orange zest, but the minerality picks up a little bit in that second taste. A little more earthiness, a little more.
[00:01:48] Almost like wet earth, if you will. And then the finish was a little heavier, too. There was a little more pepper, a little bit of maybe jalapeno. Jalapeno a little bit in that finish. Overall, fantastic tequila. I first tried this at a bar in Arandas. The bartender was so excited. He's like, you gotta taste this. My favorite tequila. And I had a lot of tequila that day, so I really didn't recall a lot of what I tasted. So I was really excited to get to taste this again and really experience what it tastes like, this is a very solid tequila. I did get to do an interview with Juan Manuel Torjillo, and he explains the different processes. And this distillery is no little distillery. This one is a pretty big setup. I look forward to visiting in September. And he they're very transparent in what they do, and he really talks about in the interview. So I'll put that down here. Check it out.
